Thalassery Chicken Biriyani/Malabar Chicken Biriyani



I have been getting plenty of request for Malabar Chicken Biriyani recipe but it got postponed mainly because I didn't have some good pictures. I don't believe I still have some great pictures but yes I'm always trying to click the very best possible with a normal Point and Shoot digital camera. I try to add the detailed description or step-wise pics if possible which kept me away from posting this awesome Biriyani till now. Even though I still don't have a really satisfying picture I thought of posting it at-least now since I've been planning to post this from so long, in-fact every time I make it at home I decide to post it immediately and that happens on almost every Friday eve. I know some of my best buddies are even a bit offended for not posting it till now (so sorry for posting it late Deeps). Now a days I see a lot of variations in Malabar Biriyani itself, I remember last time when I went to India, for my sis wedding the biriyani was made with brick red color chicken which looked like tandoori chicken(was fried chicken pieces with masala I guess, yet to find out the recipe), it was just awesome. Malabar Bistha Biriyani(Bistha is nothing but fried onions) is yet another delicious and well known Malabar Biriyani which I love to prepare for a change from regular biriyani.  




In Malabar and many parts of Northern Kerala, Biriyani is normally made with a small rice called Kaima Rice also known as Jeerakasaala Rice or Jeera Rice which is approx half the size of Basmathi Rice. I love to make biriyani's with Jeera rice which in itself have a very nice aroma and a very unique and great taste that adds the best taste and special aroma to make the authentic Malabar Biriyani.  Its hard to find this Jeera rice in USA(though some particular Indian stores have it), I use Basmathi rice instead to make Biriyani. You can make the Chicken masala in advance and make the rice at the time required. Don't make the rice first or make the rice and keep it for long time as it loose the freshness and the aroma of ghee and spices. Biriyani is always garnished with ghee fried onions, cashews and raisins(I fry onion in normal oil only). It is mostly served with raita, beetroot pickle and coconut-coriander chutney.




Not much spice powders are used in Malabar biriyani, it is very simple and straight forward recipe. Though many people don't marinate chicken before cooking I prefer to marinate fish, chicken and Mutton atleast with salt and turmeric as I believe with salt even the inner meat get a well balanced season and turmeric helps keep poultry free from any bacteria. Normally a generous amount of Ghee/RKG is used to make Biriyani and even onions are deep fried in ghee to get a better taste. Since I make it often I use minimal amount of ghee, you can increase the amount of ghee to add more taste or reduce ghee or even substitute with low fat/cholesterol free oil(like olive oil) if you are on any specific diet. Curd/Yogurt is not used in the preparation of chicken masala, tomatoes brings in the required sourness and I generally add some freshly squeezed lime juice as well. Orange food color is mixed in water or milk and is sprinkled on top of the rice to get a yellowish mixture of rice but I use Saffron instead. You can dum the biriyani either by layering the ghee rice and chicken masala alternatively or add the masaa at the bottom of the vessel and top it with the whole rice and then dum. Now off to the Malabar Chicken Biriyani recipe, do definitely try out and Enjoy the delicacy :-)


Ingredients:-


For Chicken Masala:-
  1. One Chicken(bone in) cut into medium size pieces ~ 2.2 lbs(1Kg)
  2. Turmeric ~ ¾ tsp
  3. Chilly power ~  ½ tsp(optional, I add them mostly)
  4. Salt ~ 2 tsp(Will have to check  for the salt at the end of masala preparation and adjust)
  5. Big Onions finely sliced - 4(~ 5 cups)
  6. Tomato finely sliced - 2(~ 2 ½  to 3)
  7. Fresh Ginger crushed or finely chopped or paste ~ 2tbsp
  8. Fresh Garlic Crushed or finely chopped or paste ~ 2 tbsp
  9. Green chilies crushed or paste or finely chopped - 12 to 14 numbers(can add more to make it more spicy, I make it medium spicy)
  10. Garam Masala powder ~ 1½  tsp
  11. Coriander leaves chopped ~ ¾ cup
  12. Mint leaves chopped ~  ¼ cup
  13. Curry leaves two sprigs
  14. Freshly squeezed Lime Juice from a Lime ~ 2 tbsp
  15. Oil ~ 2 tbsp
For Ghee Rice:-
  1. Jeera Rice/Basmathi Rice - 4 Cups
  2. Water - 6 to 6 ½ Cups 
  3. Cinnamon Stick - 2 inch size broken into halves
  4. Green Cardamom Pods - 5
  5. Cloves  - 8
  6. Bay leaves 2(optional)
  7. Whole Pepper corns ~ 10 nos(optional, I like to add them though normal recipes do not call for it)
  8. Curry leaves a sprig
  9. Ghee ~ 2 tbsp
  10. Freshly squeezed Lime Juice ~ 1tbsp(optional)
  11. Salt to taste ~ 2 tsp(check and adjust accordingly)
To Garnish:-
  1. Cashews a handful
  2. Raisins a handful
  3. Finely sliced Onion - 1(~ 1 cup)
  4. Oil to deep fry onion (~ ½ cup)
  5. Saffron ~ 1 tbsp(can use orange food color instead)
  6. Milk ~ ½ cup
  7. Chopped coriander leaves ~ 2tbsp
  8. Ghee/Oil ~ 2 tsp(used at the end for layering and doing dum)
Getting Ready:-
  1. Deep fry the onion(using ½ cup oil mentioned) till golden color and set aside(don't fry till brown color as they tend to cook and change color even after taking out from the oil).
  2. You can fry cashews and raisins in the same oil if you like or saute it in ghee before making rice.
  3. Bring  milk to boil by adding saffron, simmer and let it boil for 3-4 minutes. Take off the stove and set aside.
           
4. Clean the Chicken, wash well, drain of the water and pat dry. Marinate with 1 tsp salt, turmeric powder, chilly powder and set aside for 30 minutes or more if possible.


Preparation Method:-
Making Biriyani's Chicken Masala:-
  • Heat up a thick bottom vessel, pour 2 tbsp oil, add the onion, ginger, garlic, green chilies, curry leaves, remaining 1 tsp salt and saute in medium heat till onion turns translucent. 
  • Add tomatoes and saute again well till they become soft and start to breakdown leaving its juice. 
  • Now add the chicken pieces, stir well to mix everything, cover with a proper lid and let it cook till chicken is almost done in low-medium heat. It should be a slow cooking process where chicken will cook in its own moisture along with onion-tomato gravy. So always let it cook in low heat.(Chicken should not be fully cooked here, It takes around 10-15 minutes and will continue to cook another 5-10 minutes after adding other ingredients)  
  • Open the lid, add the chopped coriander leaves, mint leaves, lime/lemon juice and stir well to mix. Add the garam masala powder and saute again to mix everything. Cover it with a tight lid and let it cook again so that chicken absorbs all the flavor of garam masala and other ingredients and is fully done. It takes around 5-10 minutes in low-med heat.
  • Take off the stove and set aside till ghee rice is ready.
Making Ghee Rice:-
  • Wash rice three to four times in water till you get a clear water, drain the rice fully and set aside. 
  • Heat up a wide vessel, add ghee, saute the cashews till light brown and set aside. Add the raisins and saute till they pop up, take out and set aside. 
  • Now add cinnamon sticks, cardamom pods, cloves, pepper corns and saute well till you start getting a nice aroma of spices. 
  • Pour water to it, add salt, squeezed lime juice, few curry leaves and bring to boil. Add rice, stir gently with a spatula till the bottom of the pan just to remove any sticky rice from the bottom. Simmer the heat to medium, cover with an air-tight lid and let it cook until almost done.  
  • Open the lid once the water is absorbed(rice should not be fully cooked, but will continue to cook during the dum process) and take off the stove.
  • Let it cool for couple of minutes, say around 10-15 minutes, if you try to flip or toss the rice when it is very hot it will tend to break and stick. 
  • Stir gently with a spatula when the high steam subsides, move to two-three platters so that they don't form lumps and don't stick together. This way you will get a very nice non-lumpy, non-sticky rice. Proceed for the final stage of layering and dumming :-)

Final stage: Layering and Dumming the Biriyani in low heat:-
  • Now Stove top Layering can be done in two ways

  1. very simple and my favorite way is:
  • Heat up a thick bottom pan, add 2 tsp oil(or ghee), simmer the heat to medium. Now Dump the chicken masala to the bottom, top it with half the rice, fried cashews, raisins, fried onions, coriander leaves, drizzle few drops of saffron milk all over the rice. 
  • Top it with the remaining rice, followed by cashews, raisins, fried onions, coriander leaves. Pour the rest of the saffron milk all over the rice. 
Just before doing dumm, look at the saffron milk floating on the raisins n cashews :-)
  • Cover it with an air tight lid or place a kitchen towel flatten on top of the vessel and cover to seal tight with the lid. Cook in low heat until you see steam releasing from the sides of the vessel. Its is the right time to take them off the flame, the rice will be cooked fully absorbing all the flavor of chicken masala and will be very light, fluffy with individual grains.
See the steam coming from the top sides of the vessel, not that clear though :-)

After the dum process, looks yumm right?
  • You can gently move the rice with a sauce pan or spatula from the top to the sides, take the biriyani masala from the bottom and  move to the serving plate.
  •  Now take a generous amount of rice with the saucepan/spatula and top over the chicken masala. 
  • Spread some more raisins, cashews, onions, and coriander leaves and Serve with pickle, pappads and raita. Yummy yumm 

                                                                 OR
2.  Layer Rice and Biriyani masala alternatively and dum.
  • Heat a wide vessel, keep in low heat, pour 2 tsp of oil, spread half the rice on the bottom of the vessel, top it with masala gravy and chicken, topped with fried cashews, raisins, fried onions, coriander leaves and few drops of saffron milk.
                                    
  • Repeat the process with remaing rice, masala, fried cashews, raisins, onions and saffron milk. Cover with an air tight lid and cook in low heat till steam starts to release from the sides of the pan.
  • Move to a serving plate, garnish with more raisins, cashews and fried onion. Serve warm with pappads, pickles and chutney.


Note:-
Conventional Oven Method:- You can do dum the biriyani in conventional oven also. Pre-heat the oven to 350 Degree F in baking mode. Take an oven proof dish or silver foil tray, layer with half the rice, top with half the chicken masala, nuts and onions. Repeat the same process alternatively. Seal it air tight with the oven proof lid or silver foil sheet. Bake around 30-40 minutes.

Lemon Rice and Awards


Lemon Rice is one of the most comforting one pot meal, I mostly make this for my hubby's lunchbox. This can be made quick when you are in a jiffy and whenever you have any trip this is really wonderful rice to carry since it doesn't need a lot of labour to make them and they stay fresh for a very long time. This can be made with any left over rice as well and the rice gets a wonderful makeover. I made it with leftover parboiled Rice. So Enjoy having this ezee Lemon Rice served with Raita/Lemon pickle or just as it is :)

Ingredients: -
  1. Cooked Rice - 2 cups
  2. Lemon Juice extracted from 2 or 3 fresh Lemon
  3. Mustard seeds - 1 tsp
  4. Urad dal - 1 tsp
  5. Chana dal -  1tbsp
  6. Cashews - 1/4 cup
  7. Peanut - 1/4 cup
  8. Dry Red chilly - 2 broken into halves
  9. Shallots chopped - 1/2 cup(or 1/2 onion finely chopped)
  10. Green chilly - 3 slit into halves(optional, I prefer adding green chilly but I didn't use it here since I didn't have them)
  11. Curry leaves a sprig 
  12. Oil - 2 tbsp
  13. Salt to taste
Preparation Method:-
  • Heat up a wide pan, pour oil, add mustard seeds. When they start to crackle add urad dal, chana dal, cashews, peanut, dry red chillies and curry leaves and saute for a minute in medium heat till they start becoming light brown.
  • Add the shallots and green chilies and saute till onion turn light brown. Add the lemon juice and salt, add boiled rice when the lemon juice starts to boil from edges. 
  • Saute well till to mix everything and till the raw smell of lemon juices vanishes. Check for salt and adjust accordingly. Switch off the stove and move to a serving dish and garnish with coriander leaves if desired . Serve warm with Raita and pickle of your choice.

Ezee Tomato Rice

Tomato rice is a popular rice item made with sauteed spices and tomatoes, added to the boiled rice. Many people prefer to make it because of its easiness to make and moreover the leftover rice gets a very good makeover and results to be another yummy dish on your dining table. Here I'm adding another version of tomato rice which is very yummy and ezee recipe where you do not have to make the rice in advance. This is my way of making it on busy mornings for my hubby's tiffin, by the time you make some quick breakfast the pressure cooker will take care of your tomato rice. Smart option for working women as well, so friends give it a try and add this in your recipe bank of ezee cooking. Enjoy!!!!!


Ingredients:-
  1. Rice -1 cup
  2. Tomato chopped - 2 big
  3. Ginger finely chopped - 2 tsp
  4. Green chilly - 2 split into halves
  5. Oil - 2 tsp
  6. Mustard seeds - 1 tsp
  7. Urad dal - 2 tsp
  8. Chana dal - 1 tsp(optional)
  9. Curry leaves few
  10. Dry red chilly - 2
  11. Asefoetida - 1/2 tsp(optional)
  12. Chopped coriander leaves - 2 tbsp(optioal)
  13. Water as and if needed
Preparation Method:-
  • Wash well and drain the rice. Set aside.
  • Puree the tomato in a mixer, pour into the measuring cup(the one you took for measuring rice) and check for the quantity.
  • Add water if tomato puree is less than 2 cups and set aside(rice water ratio is 1:2, so always check for the tomato puree)
  • Heat up the pressure cooker, pour oil, crackle the mustard seeds, add urad dal, chana dal, curry leaves, dry red chilly, chopped ginger, green chilly and saute for a minute or two.
  • Pour the puree, add the asefoetida and bring to boil.
  • Lower the heat to medium, add the washed rice, stir with a spoon till the bottom of the cooker and pressure cook it for not more than 2 whistles.(If your stove is electric, remove from the stove after 2 whistles, since coil stays hot atleast for 1-2 mins the rice may over cook)
  • Let the cooker cool completely and move to the serving dish.
  • Serve warm with plain yogurt, raita, pickle or any curry if desired. Enjoy!!!

Kerala Fish Biriyani/Pomfret Fish Biriyani(Malabar Style Fish Biriyani)


Fish Biriyani is yet another specialty of Kerala Cuisine. It is more popular in malabar region I believe where fish is an integral part of daily diet. Being from Thalassery where fresh fish is abundant we used to have fish as a main or side dish every single day. Our lunch menu used to be Boiled Rice with a simple Vegetable Curry made with vegetables grown locally, a healthy Veg Stir Fry(Thoran) and a mandatory Fish Curry or Fish Mulakittathu or Fish Fry. Though the fish we get were simple fishes like Sardines(Mathi), Mackerel(Ayala), Stingray(Thirandi), Shark(Shraavu) etc, we kids were happy with one or two pieces of fish in the corner of our plate and the sniff of it helps us consume the rice without any tantrums unlike the cute little picky eaters now a days.

I prefer Fish Biriyani over any Chicken/Lamb Biriyani, my husband is a fish lover too especially this Fish biriyani. I remember him eating all the fish pieces and asking us for fish again and again when he visited us for the first time couple of days before marriage. I could see the embarrassment on my MIL's face and me and my MIL laughs everytime we discuss about it. My hubby is a person with zero formalities and I could see him 'trading' chicken for fish with my cousins when we came to my home first time(for Virunnu/Salkkaaram) after marriage ;) Those were some sweet memories of life. So I love to make this fish biriyani for him and kids and my Son absolutely loves it too.

As I mentioned before in Malabar, Kaima Rice also known as Jeerakasaala Rice/Jeera Rice is used for making Biriyani which tastes way better than the Basmathi Rice. It has a very good fragrance in its own and when cooked with spices and ghee the biriyani tastes fabulous. You guys might laugh at me when I say I carried some Kaima Rice/Jeera Rice last time when I flew back from India :-)  My FIL and my hubby were literally pulling my legs when I bought them from local store near our home. I made this fish biriyani with Jeera Rice and my hubby who was making fun of me before started appreciating me whenever I made Biriyani with this rice. You can definitely use Basmathi Rice which is also aromatic and tasty if you don't find this Jeera Rice in your local grocery stores. Try out this awesome Fish Biriyani and Enjoy!!!!!


For Rice :-

Ingredients:-

1) Jeera Rice/Kaima Rice - 2 Cups(Can use Basmathi rice instead if you don't have Jeerakasaala  Rice)
2) Cinnamon stick - 2 small
3) Cardamon - 2 to 3
4) Cloves - 4
5) Bay leaves - 3
6) Whole pepper -10
7) Ghee/Oil - 2 tsp
8) Water- 3 3/4 cup
9) Salt -2 tsp
10) Ghee fried cashews and raisins a handful

Preparation Method:-
  • In a thick bottom vessel, add some ghee/oil in low-med flame. Add whole spices(ingredients from 2 to 6) saute for few minutes till they start to give a nice aroma, pour in the water and salt and get to boil.
  • Add the rice, stir with a spoon till the bottom of the vessel, cover it with an air tight lid and let it cook till all the water evaporates.
  • Switch off the stove and let it sit for few minutes say 10 minutes(don't put the spoon and try to sir the rice immediately, rice might stick when it is very hot and stick to the bottom). 
  • Move the rice to two to three platters and let them cool so that rice do not stick to each other.

Preparing Fish Masala:-

Ingredients:-
  1. Pomfret Fish sliced and cleaned ~ 2 lbs(you can use fish of your choice, preferably less bone fish like kingfish)
  2. Turmeric pdr - 1 tsp +  ½ tsp
  3. Chilly powder- 1 tsp + 1 tsp
  4. Onion very finely sliced -2 big(~ 3 cups) 
  5. Tomato finely sliced - 2 med(~ 1½ cups)
  6. Green chilly slit into halves - 4
  7. Ginger, garlic very finely chopped or crushed - 2tbsp each
  8. Curry leaves a sprig
  9. Coriander leaves chopped ~ 2 tbsp
  10. Salt to taste
  11. Garam masala - 1 tsp
  12. Vinegar ~ 2 tsp
  13. Oil -1 tsp + 2 tsp
  14. Thick Coconut Milk - 3 tbsp(I used canned coconut milk, if using fresh coconut milk extract  ½ cup to 1 cup coconut milk. can use water instead as well but coconut milk gives a better taste)
  15. Water ~  ½ cup(can add bit more according to the gravy required)

Preparation Method:-
  • Marinate the fish with 1tsp turmeric powder, 1 tsp chilly powder, salt and vinegar and keep aside for an hour if possible. 
  • In a non-stick pan add a tsp of oil and slightly fry the fish both sides and keep aside.
  • Add 2 tsp oil in a frying pan, add onions and saute for few minutes till they turn translucent, add green chilies, crushed ginger, few curry leaves, salt and saute till onion turns light brown. 
  • Add the chopped coriander and tomatoes and saute well till tomato are soft and oil starts leaving the edges.
  • Add ½ tsp turmeric powder, 1 tsp of chilly powder and garam masala and saute to mix. Dilute the thick coconut milk by adding  ½ cup of water, add to the masala and stir well till everything is incorporated.
  • When the gravy start to boil add the fried fish pieces and mix with masala very gently taking care not to break the fish. 
  • Simmer the heat to low-medium, cover the pan and let it cook for few minutes in low heat(10 minutes). 
  • Take off the stove and let it cool for few minutes. 
Layering(Dumming) and finishing:-
  • Preheat the oven to 350 degree F in bake mode. 
  • Take a baking tray add a layer of rice, followed by a layer of fish masala, cahews, raisins.
  • Repeat the process with rest of the rice, masala, cahews and raisins. 
  • Garnish on top with some fried cashews and raisins. Cover the top tightly with a silver foil.
  • Bake it for around 25-30 minutes. Serve hot with raita, pappad and pickle.

Jeera Rice/Cumin Rice

I'm an early morning person as my hubby leaves for office at around 6 in the morning. I pack him breakfast and lunch in my half sleep every morning. So there are some days in those mornings, I will be in deep sleep and wake up late in a shock thinking what to pack for his lunch. So on one of these morning I was just browsing my fridge in my lost sleep and noticed I have some left over rice from the day before and thought of preparing Jeera rice. I just made the seasoning with Jeera and other spices and added rice to it and made quick Jeera rice. At noon my husband calls me and asks me 'what kind of rice is this? '. I was bit nervous about my ezee-lazy preparation in the morning but says calmly 'it is Jeera rice, why? you didn't like it'. And then he says,'no,it is good. just that when I microwaved, it smelled so good, my colleagues were asking me what did you get for lunch'. I must say I was so much relieved of his answer and then I started making it more often since I noticed my kids also loved it. So here is my version of Jeera rice. Enjoy the taste of effortless cooking :)




Ingredients:-

Basmathi Rice - 1 cup
water - 2 cups
salt-1 tbsp
Olive oil- 2 tbsp(or any cooking oil)
Curry leaves few
Cumin/Jeera - 1 tsp
Bay leaves - 1 medium size(you can use other whole spices as well)

Preparation Method:-

Wash and drain the rice. Heat up a pan, keep in medium heat and pour oil into it, add jeera and bay laves and saute till jeera crackles. Add curry leaves, water and salt and bring to boil. Add Rice and stir well till the bottom of the pan. Once the rice and water start to boil reduce to med flame, close the lid and let it cook. Switch off when the water is fully absorbed and rice becomes soft. Serve warm with raita/chutney/pickle or any curry of your choice

Note:-
1) You can make it with left over rice as well and it tastes good too, I prefer par-boiled rice over basmathi rice if I use leftover rice.
2) You can add more whole spices like cinnamon stick, cloves and cardamon along with bay leaves for flavorful rice.
This is one of the most flavorful rice that can be eaten with any veg/non-veg dishes or even simply with yogurt and any kind of pickle.

Delicious Chicken Biriyani

Here comes my favorite recipe for chicken biriyani. Yet again Malabar is very famous for different types of Biriyanis. In Kerala, Biriyani is made with a very nice aromatic small rice known as Jeera Rice(jeerakashala rice) also known as biriyani rice. I could not find it in any Indian store here in US, so I have been using Basmathi rice which also gives great aroma and taste. This recipe I am adding here was made for a friends get-together, so the quantity may be high. Please reduce the amount of ingredients according to your requirement.


Ingredients:-

Chicken – 2lbs
Basmati Rice – 4 cups (wash and soak rice for about 15 mins)
Onion thinly sliced- 4(fry few onions and set aside)
Tomato- 2
Green Chillies- 6 slit into halves
Ginger, Garlic crushed - 2 tbsp
Curry leaves few
Coriander leaves few(chopped)
Mint leaves-few(chopped)
Turmeric powder- 1tsp
Chilly powder – 2tsp
Coriander powder- 1 tsp
Black Pepper powder- 1/2 tsp
Garam Masala powder- 2 tsp
Yogurt- 1/2 cup
Salt to taste
Water - 7 1/2 cup
Whole spices (Cinnamon sticks, Cardamom, cloves, Bay leaves, pepper corns)
Vegetable oil
Ghee -3tsp
Cashews and raisins(fry in some ghee and set aside).

Preparation Method:-

Cooking the Rice:
1) Heat up a vessel , add some ghee, cinnamon sticks, cloves, cardamom, bay leaves, pepper corns and fry for a minute.
2) Add water and salt to taste, when water comes to boil add rice, stir it with a spoon till the bottom of the vessel and close it with a tight lid.
3) Simmer the heat to med until rice is cooked(soft). Switch off the flame and let it stand for 30 mins(this will  help rice not to break when you try to take it out when it is very hot)
4) Spread the rice to two or three platters to cool down. Set aside.

Chicken Masala:-
                        


  • Wash and clean the chicken and Marinate it with Turmeric powder, chilly powder, pepper powder and salt. Set this aside for at-least 30 mins.
  • Heat a wide frying pan or non-stick vessel, pour some oil, add sliced onion, green chilly, ginger-garlic, curry leaves, salt and fry until onions are light brown in color.
  • Add tomato and saute until soft. Add coriander leaves, mint leaves and stir till everything get mixed well.
  • Add coriander powder and garam masala powder and sauté well.
  • Add yogurt and stir until it mix well with masala. Add the chicken pieces and stir well so that chicken gets coated with all the masala. Close this with a lid and let it cook in medium heat for 15-20 mins.
  • Open and check for the thickness of the chicken masala, if you feel to lessen the gravy cook it lid open for some more time so that water is evaporated faster and the gravy thicken. 
  • Check for the taste and adjust the spices and salt as required. Add few more coriander leaves on top and remove from the flame.
Layering the biriyani:-


1) Pre-heat the oven to 350 degree F. Grease a baking tray with butter/ghee and set aside.
2) Start layering the biriyani with rice and chicken, start with half the rice, followed by chicken masala, fried onions, cashews and raisins.
2) Repeat layering by the rest of the rice and chicken masala topped by rice again until done. 
3) Garnish on top by adding few fried onions, cashews, raisins and chopped coriander leaves.
4) Bake it covered for 20-30 mins. Delicious chicken biriyani is ready to be served with raita, papad and lemon or mango pickle…
Note:- you can use the stove top method instead of a baking to get the dum effect. Add some ghee in a thick bottom vessel and do the same process as mentioned in layering. Cover the vessel with a proper air tight lid and top a heavy vessel(filled with water or something). Keep the flame on low-med and dum it for 15 - 20 mins..

Vegetable Biriyani

Normally I cook chicken or lamp biriyani at home and parties since my husband and many of our friends are non-veg lovers. We got a friend recently who is a veggie and we were invited to their home for their daughter’s 1st birthday party. Since she being a mom of two kids is tough to cook all the dishes alone we planned for potluck . I was told to make any kind of rice and she told me it is fine even I get some normal Basmati rice cooked. First I thought of making pulav, but then I decided to make veg biriyani. I was trying this recipe for first time and you guys might not believe me if I tell this recipe came out soooo good. All our friends in party were telling me that biriyani is veryyyyy yummy. My husband was like ‘ohhhh I never knew that veg biriyani can be this tasty’. Then I realized this an easy recipe and I can prepare it for my baby who just turned one yr old and it is really not much spicy for him too…




















Ingredients:-

Basmati Rice – 2 cups(u can wash and soak rice for about 15 mins)
Mixed Vegetable (cauliflower, potato, carrot, beans) - 3 cupsGreen Peas- 100gms
Onion thinly sliced- 4
Onion Finely Chopped- 2
Tomato- 3Green Chillies- 6
Ginger, Garlic crushed- as required
Coriander leaves-1 bunch
Mint leaves-few
Turmeric powder- 1tsp
Coriander powder- 1 tsp
Black Pepper powder- 1/2 tsp
Garam Masala powder- 2 tsp
Yogurt- 1 cup
Salt to taste
Water- 3-3/4 cup
Whole spices as required (Cinnamon stick-3, Cardamom-4, cloves- 4, Bay leaves-4)
Vegetable Oil for deep frying veggies (you can shallow fry it also if u r health conscious)
Cashews and raisins as required.

Preparation Method:-

1) To cook rice heat oil in a pan in medium flame, add whole spices and fry for 1-2 mins. Add water
and salt to taste. Add soaked rice when water comes to boil, stir it with a spoon till bottom and close the pan with a lid, simmer until rice is soft and tender. Turn the rice out 2 or 3 platters to cool down, cover it and set aside.
2) Fried Veggies: - Peel one large potato, and cut into small cubes. Heat some oil in a non-stick skillet, deep fry the potatoes until golden, drain and set aside and fry sliced onions until golden-brown. Also fry cauliflower florets, peas, diced carrots and beans. Fry some cashews and raisins as well.

3) Heat a frying pan to make masala. Add chopped onion, green chilly, ginger-garlic and fry until golden brown in color. Add tomato and sauté until soft. Add coriander leaves, mint leaves and stir. Add turmeric powder, coriander powder, black pepper powder and aromatic garam masala powder and sauté well. Now add yogurt and stir in until it mix well with masala.

4) Now start layering the biriyani and the best part. Take a baking tray and grease it with some butter. Start with half the rice, followed by some fried veggies and onions, nuts, raisins and the masala followed by the rest of the rice. Repeat the layering till finished.  Decorate on top by adding few fried onions, nuts, raisins and chopped coriander leaves. Bake it covered by a silver foil for 30 mins at 350 degree Fahrenheit

6) You can serve it as it is or with raita and achar/pickle
