Oats Veggie Puttu ~ Kerala's own favorite breakfast served healthy


Ingredients:-
  1. Oats/Old Fashioned Oats - 2 Cups
  2. Grated Carrot ~ 1/2 Cup
  3. Onion chopped fine - 1 medium
  4. Green chilly chopped fine - 2(optional, avoid if making for small kids)
  5. Coriander leaves chopped fine - 3 tbsp
  6. Grated Coconut as needed
  7. Salt - 1/2 tsp(to taste)
  8. Water - 1/2 tsp

Preparation Method:-
  • Add oats to a wide pan bowl and crumble it as much with clean hands
  • Add the grated carrot, onion, green chilies, coriander leaves and salt and mix well with hands.
  • Carrot's and onion's moisture should be enough to make the oats moist enough when you mix. If you feel it too dry, sprinkle water little by little and mix till you get a moist lightly crumbled mixture.
  • In the puttu maker fill in the grated coconut and oats mix alternately.
  • Steam it till done. Serve hot as it is or with stew or curry of your choice

Oats Yogurt Porridge ~ Oats Thayir Saadam


How do you use Oats in your daily diet which is considered as healthful, nutritious, which also have cholesterol lowering properties, very fibrous and above all considered as great alternative for rice/rotis for people who are diabetic. Though we are not diabetic oats plays an important role in our day to day food, especially when it comes to dinner. There is one more reason(secret) behind my love for oats, it comes handy when I feel terribly lazy to roll Rotis in the evenings. Though we are Oat freaks, my hubby is not so fond of our normal Oats Milk Porridge, even if I mix n match with the addition of brown sugar, generous amount of his favorite nuts, fruits and many more in the name of adding flavor and taste. That is how I ended up making Oats Poha which is one of his favorite, to be more precise he like something with the blend of spices, more Indian than something bland.


And now since my parents are here and my mom don't eat rice at night, I'm always experimenting with oats, wheat flour, Quinoa, Raagi Flour and many more healthy alternative at nights. That is when my sister told me to try it with Yogurt/Curd which she tried once and liked. I was waiting for something new like this and end result of making it for the first time was an empty vessel which was relished by the whole family including my little teddies. I call it Oats Thayir Saadam/Yogurt Rice as they looks similar and the cooking process and taste resemble a lot. I believe may be because my little ones love Thayir Saadam they tend to love this Oats Porridge as well. So lemme stop blabbering and move on to this delicious and healthy oats recipe which is equally good for young and elderly people, Try it today and Enjoy with your loved ones !!!!!



Ingredients Used :- 

  1. Quaker Old Fashioned Oats - 1 Cup
  2. Water - 3 Cups(More if needed)
  3. Salt to taste(~ 1 tsp)
  4. Sour Yogurt/Curd - 1½ Cup(Add  ½ cup of water and dilute if the yogurt is very thick) 
  5. Cilantro/Coriander leaves chopped ~ 2tbsp
For Seasoning/Tempering:-
  1. Olive Oil/Oil - 2tbsp
  2. Mustard Seeds -1 tsp
  3. Jeera/Cumin - 1tsp
  4. Chopped Shallots - 1tbsp
  5. Ginger finely chopped - 1 tsp(optional, I add if I'm not in a hurry)
  6. Green chilies chopped - 1 tsp(optional, add it if you need to increase some spice)
  7. Urad Dal - 1 tsp
  8. Peanut - 2tbsp
  9. Curry leaves few 
  10. Dry Red Chilies -4
Preparation Method:-
  • In a wide vessel cook oats with water and salt stirring continuously. Once they start to boil simmer the heat to medium and let it cook for another four to five minutes. Take off the stove and let the heat come down from boiling hot to bearable.
  • Beat the yogurt gently with a fork, just to remove the lumps. Pour it over the cooked oats and give it a gentle stir to blend well.
  • For tempering heat up another small pan, pour oil, add mustard seeds. When they start to sizzle simmer the heat to medium, add jeera/cumin and let it pop. Add chopped shallots, red chilies, urad dal, peanut, curry leaves and saute till shallots turn golden brown. Pour over the Porridge and mix well. 
  • Serve warm with pickle and pappads/fryums or just plain.

Oats Poha and a Liebstar Award

Oats and Poha?? I know I had the same feeling when my husband asked me to make Oats Poha couple of months back. One of his colleague brings oats Poha at work and that is when he asked me to try making Poha. Men are men, I was sure he will not check with his colleague for the recipe and yea I was right when he gave me a weird look when I asked him to do so ha ha ha :) But at the end when I started making it this way and it was well enjoyed by all my husband said he is gonna patent it in his name since the great idea was him. wow, what an idea sirji, dimaakh jiska patent uska? he he..

We are so familiar with Oats Porridge, dosa, Oats mixed roti's, cookies etc and oats freaks like me and my husband can eat anything with oats. I was so confused about making Oats Poha as you know normally Poha is dry and non-sticky where as when oats combines with even little bit of water becomes very sticky and mushy. I gave it a lot of try and at the end I started making it with out adding any water and sautéing it by sprinkling water little by little till Oats leave its raw flavour. I must say this recipe comes with a lot of trial and errors but all the trials were worth trying it. This has become our family favorite dinner from quite a while especially on those days when we do not want to have any heavy dinner. So try it friends especially those who like oats or try this for the elderly people at home who are regular in having oats at night. Lets give them a break from the same porridge, I'm sure all will enjoy this.

                                             

Ingredients:-
  • Old fashioned Quaker Oats - 2 cups
  • Onion finely chopped - 1
  • Tomato finely chopped - 1(optional)
  • Green chillies finely chopped - 3(or more as per your spice level)
  • Ginger finely chopped - a small piece or say 1 tsp
  • Turmeric powder - 1/2 tsp
  • salt to taste
  • Curry leaves - a few
  • Oil - 2 tsp
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tp
  • Chana dal - 1 tsp
  • Raisins few(optional)
  • Cashews few(optional, adding dals and nuts r optional they give a great taste though)
  • Coriander leaves finely chopped - 2 tsp(optional)
  • Lemon juice - 2tsp
  • Water - 1/4 cup(use more/less as needed)
Preparation Method:-
  • Heat a non-stick pan and pour the oil to oil. Add mustard, when they start crackle reduce the heat to medium and add urad dal, chana dal, curry leaves and stir. Add cashews and rasins ad saute for few more secs.
  • Add chopped onion, ginger, green chilly and saute well till golden color(light brown color only).
  • Add finely chopped tomato as well and saute well till tomato's blend well with onion.
  • Add turmeric powder and stir for few secs. Add oats and stir well and mix with onion-tomato mix. 
  • When the mix becomes very dry sprinkle a handful of water and stir well again. 
  • Check for the salt and sprinkle little more salt if the oats have not absorbed salt taste .
  • Keep stirring and sprinkling water 3-4 times till oats leaves it raw smell and absorbs the taste of the seasoning.
  • At the end add lemon juice and stir well to mix. Switch off the flame and move to a serving dish.
  • Garnish with chopped coriander leaves and serve warm.
